A filling, delicious pasta dish that won't leave you feeling guilty! :) This recipe is vegan and can be made gluten free if you use gluten free pasta.
Here are all the ingredients - I also added some red lentil pasta from my fave store Trader Joe's because the one bag of zucchini pasta wasn't enough pasta for me :P
Start with a large skillet over medium heat, add about 1 1/2 tablespoon of your cooking oil (I eyeball it, make sure the bottom of the pan is covered), and add your chopped onions. Let the onions begin to caramelize, then add your broccoli slaw. Let this cook for about 3-4 minutes until the broccoli slaw starts to soften just a bit. If you are using Trader Joe's Lentil Pasta, start a pot of boiling water as well. Season the pasta water with a sprinkle of salt and add the pasta once the water is at a boil.
Add your tomatoes, I cut mine in half but depending on the tomatoes you use - you can leave them whole! Let all these veggies saute for about 2-3 minutes, stirring every so often.
Add your spinach! Note: one bag of spinach will wilt down to almost nothing! So don't worry if it looks like a ton of spinach at first, it will wilt down to less than half. Season your veggies to taste with salt, pepper, garlic powder and 21 seasoning salute. If you want a little spice, add some red chili flakes. While your veggies are cooking, put your zucchini pasta in the microwave! If you are using Trader Joe's Red Lentil pasta as well, you should have your pasta in your boiling water at this point. Check to see if it is cooked al dente, have your strainer on hand!
Remove your pasta from the heat and strain, the add both your zucchini pasta and Red Lentil pasta if you're using it to a large tupperware or bowl if serving immediately. Remove your veggies from the heat and add to the pasta. Mix until the veggies are evenly distributed through the pasta and enjoy!
May top with organic tomato sauce, nutritional yeast or Parmesan cheese if you're craving some cheesy goodness!
